Luxurious Buttermilk Pancakes with Crispy Streaky Bacon
Crispy streaky bacon in all its glory.
Indulge in a delightful brunch with this recipe for fluffy buttermilk pancakes topped with crispy bacon and a generous drizzle of maple syrup.
Serves 2.
Ingredients:
50g Plain Flour
1 tsp Baking Powder
1/4 tsp Bicarb of Soda
1/2 tbsp Caster Sugar
1 Large Egg (separated)
142ml Buttermilk
Knob of Melted Butter
6 Smoked Streaky Bacon Rashers
Maple Syrup
Strawberries
METHOD:
Pre-heat a grill to a medium heat and grill the bacon until nice and crisp.
For the pancakes, sift the flour, baking powder, bicarbonate of soda, sugar and a pinch of salt into a bowl. Whisk the egg whites until stiff. Mix together the egg yolks, buttermilk and melted butter and whisk into the flour mixture until the batter is thick and smooth. Carefully fold the egg whites into the batter until mixed.
Heat a large frying pan, preferably nonstick, and brush lightly with melted butter. Drop 2 or 3 large spoonfuls of batter into the pan, after about 3-4 minutes once they have started to bubble slightly and brown, carefully flip the pancakes over and cook on the other side until browned.
Once ready assemble the pancakes, top with crispy bacon and a generous drizzle of maple syrup and a few fresh strawberries to finish the dish.
