Bacon, Avocado and Scrambled Egg Bagel

 

The perfect bacon and egg breakfast.

 
 

Made with fluffy scrambled eggs, smashed avocado and delicious crispy bacon. All served on a toasted seeded bagel.

Serves 2.

 
 

Ingredients:

6 Unsmoked Rindless Streaky Bacon

2 Seeded Bagels

1 Avocado

3 Eggs

Knob of Butter

Salt & Pepper

METHOD:

Pre-heat a grill to a medium heat and grill the rashers of bacon until they are the desired crispiness.

Mash the avocado with a fork until smooth.

Season with a pinch of salt and pepper.

Beat the eggs with a little butter and cook on the hob slowly, stirring occasionally, until they are just set and fluffy.

Cut the bagel in half and lightly toast if desired.

Build the bagel, spreading the avocado first, followed by the scrambled egg and the crispy bacon and finish with the bagel top.
